Wes began his life in the kitchen as many others before him, washing dishes and peeling potatoes at a local dive. A graduate of Niagara College, he worked his way up through the ranks first in pastry at Hillebrand Estates before becoming the pastry chef at Vineland Estates Winery. After making the transition back to the savory side of things Wes worked under renowned chefs Tony de Luca and David Lee before eventually becoming the chef at the Restaurant Oban Inn. Most recently he joined the Landmark group as sous chef to help open the Cambridge Mill with long time friend and chef Brad Lomanto.
Passionate about flavours that are simple and approachable, Wes believes that the best meals are enjoyed with friends and made from scratch. Everything possible is made in house, including our smoked bacon, fresh made buns, pizza dough and desserts. Even condiments such as ketchup, mayonnaise, and red pepper relish begin as simple tomatoes, eggs and peppers in the kitchen. Wes is unbelievably excited to embark on this new culinary adventure in the beautiful Hamilton harbour.

The menu will feature the highest quality products and give our guests a quality and consistency of food that isn't found anywhere in Ontario. Our menu will feature house aged steaks, our own smoked meats such as brisket and sausage, as well as seasonal salads, and house made desserts.
Our menu will change with the seasons showcasing the best of what is fresh and available. Our menu will strive for a balance so we can be accessible for guests with all desires.
